2018: Dag 35 - Sweet potato wafles
***Flour-Free Sweet Potato Waffles w/ no added sugars***
You won't need much to make this delicious recipe!
▪️4 oz cooked sweet potato
▪️1 egg
▪️1/2 tsp cinnamon
▪️non-stick cooking spray
▪️waffle iron
1. Pierce sweet potato in a few places with a fork or knife.
2. Bake at 350 degrees for 30-40 minutes, until tender or use the microwave potato setting to cook.
3. Heat waffle iron.
4. Measure 4 oz cooked sweet potato and mix with 1 egg and 1/2 tsp cinnamon.
5. Lightly spray waffle iron with non-stick cooking spray.
6. Add potato mixture to waffle iron and cook for several minutes, until desired doneness has been reached.
7. Serve with 6 oz fruit and a 1/2 protein on the side. (Ideas for 1/2 protein: a fried, boiled, or poached egg, 2 oz breakfast meat, 4 oz Greek yogurt, 1 oz nut butter or nuts, or 2 oz Greek yogurt mixed with .5 oz nut butter.)
